good afternoon and welcome to the good
0:08
plates kitchen well today is guess what
0:11
today is pie day it's called P day
0:15
because Pi the numerical number pi is
0:20
having to do with the circumference of a
0:22
circle and Pi is
0:26
3.14 which is what March 14
0:31
so we are making a triple for three for
0:37
for p day we're making a
0:39
triple
0:41
citrus mering pie and here we have
0:46
[Music]
0:49
grapefruit here we have
0:53
grapefruit lime this is true lime this
0:56
stuff is absolutely amazing it's
0:58
actually um
1:02
it's actually crystallized lime and it's
1:05
great for things where you don't want a
1:07
lot of juice like you've
1:09
got
1:11
um if you're making a sauce or something
1:14
and you need to have juice in it this is
1:15
a great choice without breaking the
1:18
juice okay and then we have in here is a
1:23
lemon and just for fun we have some
1:27
penzy lemon
1:28
peel I'm not making this with corn
1:31
starch CU I don't particularly care for
1:33
corn starch so I am making this
1:37
with sweet and condensed milk okay you
1:40
can use any brand this happens to be a
1:42
CO brand you can use any brand you want
1:45
and we have three eggs that are going to
1:48
be going
1:50
into the filling and the crust itself is
1:55
going to be
1:57
butter and gram craft crackers we're
2:00
going to get set up and we'll be back
2:04
let me introduce you to my little friend
2:06
this is a
2:07
Brun food processor and it is really
2:13
wonderful for making things like gr
2:17
cracker crust so we're going to put the
2:20
S blade there's the S blade we're put
2:22
the es blade
2:26
inside like
2:28
this
2:31
okay and then I'm going to start
2:33
breaking up some of these gram crackers
2:35
going to process them
2:38
first one of the nice things about this
2:41
machine is that even though the crackers
2:43
will make a lot of noise the motor on
2:46
this does not okay so here we go and I'm
2:49
going to start it at 5 I think and we're
2:52
going to put it on
2:54
pulse wa really loud okay now you can
2:57
see that those pieces are really small
3:01
now I'm going to
3:03
add about a/4 of a cup of
3:11
sugar and just to make things more fun
3:15
I'm going to add some lemon peel to give
3:16
it some extra
3:18
[Music]
3:25
flavor and then the last thing we're
3:28
going to add is melted butter all the
3:33
ingredient amounts are on the website
3:35
that's
3:36
[Music]
3:38
about 1/4 of a cup of melted
3:45
butter oh it's coming along very
3:49
nicely
3:51
[Music]
3:52
okay I'm going to get the plate set up
3:55
and I'll show you how to make the actual
3:57
crust the G crackers have been taken out
4:01
of the food processor and they're now in
4:03
the PIP plate and what you want to do is
4:06
spread them
4:08
[Music]
4:11
around so you have a nice
4:14
crust like
4:16
[Music]
4:23
that try to make it as even as
4:28
possible
4:33
and help make it
4:37
even you can
4:42
use a measuring
4:44
cup one of these kind of measuring cups
4:47
You're do a really good job at making
4:50
things nice and flat make sure it's
4:52
really
4:53
[Music]
4:57
compacted on the side with your hand
5:02
and press so it gets nice and compacted
5:06
this is going to go
5:08
into a 350
5:11
oven and then we can continue with the
5:14
filling okay time to make the mering
5:17
it's easier to make the mering now so
5:20
I'm going to have to wash one bowl so
5:23
here are three egg
5:26
whites two three
5:30
start it off kind of
5:32
slow bring it up to
5:35
[Music]
5:45
[Music]
5:49
three you see bubbles are already
5:54
starting going add
5:58
sugar
6:01
a little bit at a
6:03
time I want to overwhelm it at the
6:08
speed there we
6:14
go you want to beat this until stiff
6:17
feet form oh look it's coming along
6:20
nicely
6:28
now
6:31
while that's happening I'm going to take
6:33
the crust out of the oven
6:36
beautiful that's
6:42
beautiful you can
6:45
[Applause]
6:47
see it's also a good idea with your
6:50
mixer never you go from 10 to
6:53
zero at one time because that can hurt
6:56
the motor see how beautiful that is
7:00
and we'll go like that and then you can
7:02
really see how it's holding the shape
7:05
all right some of this we're going to
7:07
reserve because it is Pi Day we need to
7:10
write Pi on there so I have a glass here
7:14
this is
7:16
a star
7:18
tip it's a star
7:21
tip and then I just put it in a glass CU
7:24
it's easier to him to
7:27
fill you put it there like that
7:34
[Music]
7:38
and then you fill this up we don't need
7:40
much I'm just going to put a little
7:44
[Music]
7:48
bit that should be
7:53
enough and we'll set that as that should
7:56
be enough and we have this much lift
7:59
over that's going to go on top of the
8:01
pie time for Natasha to come back to
8:03
work this is Natasha my mixer is Natasha
8:09
and I have a special blade special whip
8:12
for her if you don't have one of these I
8:14
highly recommend them because they can
8:17
scrape the sides and they do a really
8:19
good job we don't really need to use the
8:22
mixer for this but I figure it's One
8:24
Bowl One Bowl okay so into here goes the
8:28
sweet condensed milk
8:31
sure that you get all of it because you
8:33
want all the goodness and we're going to
8:35
add egg yolks these are from the eggs
8:39
that we had three egg whites so these
8:41
are the three egg
8:43
yolks
8:45
two
8:47
three and finally this
8:50
is the grapefruit juice and lemon and
8:55
I'm adding a few
8:58
shakes of L to that you don't need very
9:02
much that's about maybe A4 of a teaspoon
9:05
all
9:09
right and now we're going to add
9:12
that
9:14
to our
9:16
[Music]
9:19
bowl
9:21
and
9:24
up and mix on stir you can of course do
9:27
this in a regular Bowl
9:29
[Music]
9:36
and you just want to stir
9:40
[Music]
9:41
it until it's thoroughly Incorporated
9:44
all the
9:45
[Music]
9:48
egg is mixed in
9:51
there okay there's our pie shell that
9:55
came out of the oven and I'm going to
9:58
pour
10:00
this filling it into the
10:02
[Music]
10:06
pie I have my
10:09
mering and I'm going to put that on
10:11
[Music]
10:21
there ring
10:24
down go
10:26
one and that
10:30
that's the pie
10:33
symbol put a three on here
10:37
also one and a DOT
10:41
one
10:43
[Music]
10:55
four
10:57
okay this pie is going to go into the
11:00
oven
11:03
and it'll go in there for about 20 or 30
11:05
minutes until it's nicely browned well
11:09
the the the lits and stuff are brown and
11:12
then we'll take it out and then it has
11:13
to cool in the
11:16
refrigerator until it's very cold
11:19
because the coldness will set it and
11:21
will set the filling okay we'll see you
11:23
in a little
11:26
while welcome back and here is our
11:31
wonderful three Citrus mering pie for
11:35
pie day March 14th also happens to be
11:40
Einstein's birthday okay let's C into
11:43
[Music]
11:58
this it's perfectly set
12:07
to I know the first piece is always as
12:10
pretty as the
12:16
[Music]
12:18
rest have to have a taste of
12:21
[Applause]
12:21
[Music]
12:25
it beautiful mering the inside
12:33
