I decided to make roasted salsa.
0:06
The first thing I did was roast the tomatoes and the chilies.
0:11
And the best way to do that is an air fryer because it gets everything all
0:16
nicely charged without having to burn yourself.
0:19
And it's just a matter of steaming the vegetables
0:23
so that the skins would come up easily.
0:25
And then we put them in a food processor and make salsa out of them.
0:34
Now, I also had a wonderful fresh leek sitting in my refrigerator.
0:38
If you don't know what a leek is, it's part of the onion family.
0:42
And it's actually pretty sweet tasting, but you only use the white part.
0:46
You don't use the green part because if you use the green part, oh, boy,
0:51
Anyway, I sauteed the leek in butter. And then I combined that with the salsa that
0:57
I had already created in the food processor.
1:01
And I put this in my bowl.
1:03
And the bread machine is a wonderful thing to use.
1:06
It has a setting called jelly.
1:08
And all it does is warm the interior and stir it for you.
1:13
So it reduced down and made this absolutely amazing nice thick salsa.
1:19
I took that salsa and I mixed it with fresh cilantro and Armenian pepper paste
1:25
because that Armenian pepper paste makes things taste really, really fresh.
1:28
And I put it in a nice, vegetable and served it with a beautiful roast pork.
