Here is something most bulgur pilaf recipes get wrong — they skip the toast. Sauté your aromatics in butter first, then add dry fine bulgur and let it turn golden and nutty before any liquid goes in. Add boiling hot liquid, seal the lid, Keep Warm for thirty minutes, and open to perfect fluffy grains every time. No Burn notice required.
