No double boiler in your kitchen? Here's how to build one right now.
Saucepan. About an inch of simmering water. A heatproof bowl set on top — bowl never touches the water. Steam heats everything gently and evenly. That is a double boiler, and it costs you nothing extra.
Here's why it matters: cheese is fat, protein, and water. Too much heat, too fast, and the proteins seize up, the fat separates, and your sauce breaks. The double boiler keeps everything controlled so your sauce stays smooth and glossy.
Skip the microwave. It heats unevenly, it heats fast, and you'll lose the sauce before you realize what happened.
Stir constantly. When the sauce coats the back of the spoon, you're done.
