Good afternoon and welcome to the Good Plate's Kitchen.
0:09
Today we are making Chicken Birria in this slow cooker.
0:16
This is something that you can start before you go to work and use your slow cooker.
0:22
Okay, so let's see what we're doing.
0:24
We're using chicken breasts.
0:28
And I want you to see that these chicken breasts are actually frozen.
0:33
And we can do that because modern slow cookers come up to temperature,
0:39
which allows them to cook frozen foods.
0:42
It'll add a little bit more time about half an hour, but that's okay.
0:46
So we're going to be doing that.
0:49
But before we do that, I want you to introduce you to
0:53
our show, which should be Chili Negro, New Mexico Chili.
1:03
And we want some smoky flavor.
1:06
We're going to put some chipotle chilies in there as well.
1:15
And oregano, garlic clove,
1:20
bay leaf, of course, cumin, onion.
1:31
And we're going to use diced tomatoes.
1:34
These are organic diced tomatoes.
1:39
You can find them at Imperfect Foods.
1:43
Okay, and we're going to be using corn tortillas for our tacos.
1:48
So let's get started.
1:49
The first thing we have to do is make the sauce.
1:59
So the first thing we're going to do... this is the Chile Negro.
2:09
Notice they're the sign inside.
2:11
So what I'm going to do, and I'm done with this, I'm going to reseal this using my
2:15
vacuum sealer, but I'm keeping that label inside.
2:19
So I know what it is.
2:22
Let's see what it's put.
2:27
Now we're going to put the chipotle.
2:51
This is the chipotle pepper.
2:59
Chipotle. Some Negroes.
3:04
And the last one we're going to put in there is New Mexico Chilly.
3:16
We're going to put two
3:27
I have this label also.
3:34
Now, you can see, they're very nice.
3:36
So we're going to add hot water.
3:40
This is boiling hot water.
3:42
We're going to completely cover these chilies.
3:52
And let them rehydrate.
3:54
Once they are rehydrated, we will stick them in a blender.
3:58
And we'll make the sauce out of them.
4:00
The peppers have softened.
4:02
You can see they look completely different.
4:10
Wait, that's the Negro.
4:14
I think we can find the chipotle.
4:20
Anyway, they're all nice and soft now.
4:28
What we're going to do with these is we're going to put them in a blender.
4:34
And I have a measuring cup because we're going to use some of the liquid.
4:41
At first, we're going to put these in here.
4:57
There's the chipotle.
5:02
And I'm going to take two cups of this.
5:22
I'm going to add the canned tomatoes.
5:30
Fresh tomatoes are fine in this.
5:34
We were kind of running a little bit. low.
5:37
And this is a half of a red onion.
5:45
We're going to make a salsa with the rest.
5:49
I'm also going to add a clove of garlic.
5:56
Now, this is something kind of interesting.
5:59
This is chicken base from Better Than Bullion.
6:03
I really like that brand.
6:05
But this is chicken base.
6:06
And what this is going to do is it's going to give it.
6:09
rounding flavor so that it won't be all chili.
6:13
I'll have some umami flavor in it.
6:15
And it's also got salt.
6:18
So there will be salt.
6:20
And I'm going to put the top on.
6:35
I wish you could be here to smell this.
6:37
The smell is absolutely... Okay.
6:43
Now, it's not done yet.
6:45
Of course, it's not done yet.
6:48
We're going to... we have to cook it.
6:51
Okay. So the flavor is going to really marry.
6:54
And we're going to put it in this pan like this.
7:07
And we're going to put a bay leaf in there.
7:11
And I'm going to cook that until it reduces down for about 20 minutes.
7:21
We have the chicken in the slow cooker.
7:28
We're going to add - the sauce is ready.
7:30
So we're going to add the sauce.
7:38
Wish you could smell it.
7:41
Okay. We'll add that.
7:46
And you can just put the whole thing on there.
7:50
Make sure all the covered pieces of chicken are covered.
7:57
If you want to, you could move around in the sauce.
8:11
I'm going to put the top on.
8:18
And I'm going to set it on low.
8:23
And I'll come back in about five hours.
8:25
And we'll have a wonderful, wonderful dinner.
8:29
And we'll see you then.
8:32
Welcome to our table.
8:34
As you can see, we have the chicken, the sauce.
8:38
We have cheese, cabbage, salsa, homemade, and of course, homemade guacamole.
8:44
I can't wait to eat this.
8:46
And thank you for watching.
8:48
We'll see you next time on the Good Plate.
8:51
And remember, ever forward, ever flavorful, yum, yum!
