Good afternoon and welcome to the Good Plate's Kitchen.
0:05
Today we are going to make something that I
0:08
absolutely love. There is a Japanese sushi
0:11
restaurant in Glendale called Kamuduro Sushi and they make a baked salmon roll
0:19
that I absolutely love.
0:21
So I wanted to recreate it here and we have a salmon.
0:27
We're going to be cutting that up.
0:38
invitation crappy, sushi rice, and Japanese barbecue sauce, rice vinegar,
0:47
garlic, and scallions.
0:49
Now it's important when you're making this to use the right kind of rice.
0:55
This is a short green rice.
0:58
It's called sushi rice.
1:02
And sushi rice is flavored with rice vinegar.
1:07
You can use the flavored rice vinegar.
1:10
This one already has all the ingredients in it.
1:15
Usually you would use rice vinegar and sugar.
1:17
This is already seasoned, so you don't have to do that.
1:20
And I'm going to make our rice in the Instant Pot.
1:23
So it'll be very, very easy, no burning, no problems.
1:28
Of course, if you want to use real crab, you're more
1:32
than welcome to, but we're using imitation crab.
1:34
This is known as Surimi.
1:37
It's fine. Cream cheese and an avocado for the garnish.
1:44
Okay, the first thing we have to deal with is the rice.
1:47
Now, when you make sushi rice, you have to rinse the rice until the water runs clear.
1:55
So I want to introduce you to my little friend.
1:59
This is actually for making rice.
2:03
But Il use it for all kinds of things.
2:07
Like if I want to drain beans or canned food
2:09
or whatever. Let's measure this rice first
2:17
so we knew how much water to put in.
2:20
Because the ratio is just as usual as rice usually is, it's one to one.
2:29
We're just shy of two cups.
2:32
So I'm going to call this one and three quarters.
2:37
This little guy is trying to escape and not be part of our dinner.
2:42
Okay, I'm going to take this and I'm going to rinse it.
2:45
Okay, now the rice is finished.
2:48
It's in the pot of the instant pot.
2:53
And we're going to add the seasoned rice vinegar to the water.
3:02
Okay, and you can see I have a cup and a half of water right here.
3:10
So I'm going to add a quarter cup of the seasoned rice vinegar.
3:28
Okay, I'm going to add this to this.
3:36
Okay, here we are with the crab,
3:41
surimi, and I've already broken that up with my hands.
3:45
We're going to be layering this.
3:48
So that's why I broke it up.
3:52
I'm going to put a thin layer of that on the salmon as well.
3:56
And I'm going to show you the salmon.
3:58
Okay, so here's our here's our salmon.
4:01
And I'm going to put some seasoning the garlic.
4:09
You can see this salmon is on foil.
4:12
So we're going to take the salmon and we're going to put it in the oven.
4:30
And you can see I use this method also when I make steelhead trout.
4:37
And you can see the method that I use is basically the same method.
4:42
Okay, so we can have salmon all ready.
4:47
It's kind of in the middle.
4:53
Now what's going to happen is the onion and the garlic
4:56
are going to give the salmon some extra flavor.
5:03
We have some ginger paste too.
5:05
I'm going to put a little bit of that on there too.
5:09
Give it some extra flavor.
5:10
You don't need very much.
5:14
So now just take that kind of distribute it around.
5:21
It's a paste really like this paste.
5:25
It's a really kind of full proof.
5:28
All right, now we're going to take her.
5:33
I'm going to seal her up.
5:38
And I'm going to set it
5:46
up like that. Like that.
6:06
Okay, we're going to put her in a 350 F (176 C) oven.
6:11
until she's at temperature.
6:12
And we're going to use a probe to make sure that
6:16
our salmon is the correct temperature that it's cooked through all the way.
6:20
We're going to put it in the thickest part, which should be right here.
6:25
And just to get in there like that.
6:28
Okay, this is a Square Dot from Thermonix.
6:32
The best one you can buy.
6:34
Okay, right now the interior of that salmon is 29 degrees Fahrenheit (-1.67 C).
6:41
Okay, we want to get it to 135 F (57 C).
6:50
So we're going to make it so it goes to, but let's say 130 F (54 C) just to be sure.
6:56
Okay, we're going to set it for 130 F (54 C)
6:58
and we're going to put it in the oven.
7:00
And it will a little beep when food is ready.
7:05
Okay, we'll see you then.
7:07
Okay, the salmon is out of the oven.
7:09
Show you what it looks like.
7:12
That! Isn't that beautiful?
7:17
It is perfectly cooked.
7:20
Okay, I'm going to plate it.
7:24
I'm going to show you that in a few minutes.
7:28
And this is our completed dish.
7:34
See, we have rice layer, salmon layer, cream cheese layer.
7:41
Crab layer and more salmon.
7:43
I'm going to have a bite.
7:46
And tell you how absolutely fabulous it is.
7:54
A bite with everything.
8:03
You have to try this.
8:06
You can get the full recipe with all the
8:09
ingredient amounts and full directions
8:16
on the website and we'll see you next time on the Good Plate.
8:23
Remember, ever forward, ever flavorful.
