good afternoon and welcome to the good
0:08
plates kitchen today we're making
0:12
homemade mayonnaise similar to Best
0:15
Foods I'm a mayonnaise person I love
0:18
mayonnaise and I'm in the best foods
0:20
Camp I know some of you are in the Duke
0:22
camp or other
0:24
camp but um we're doing best foods and
0:29
you know you can play with this until
0:31
you if you like Dukes you can play with
0:33
this I think it's a little sweeter so
0:36
maybe add sugar or something to it I'm
0:37
not sure anyway um here's what we have
0:41
we have colan's
0:43
mustard we have some plain canola oil um
0:49
the oil you want to use an oil that has
0:52
like basically no flavor so um peanut
0:55
oil would work here sunflower oil would
0:57
would work here any oil that does have
1:00
any flavor of course if you want olive
1:02
oil flavored mayonnaise then you would
1:04
use olive oil um distilled white
1:09
vinegar um this gives it
1:12
it's the taste that you really want it's
1:15
that it so um other vinegars don't quite
1:18
work as well I've tried red wine vinegar
1:21
and the plain distilled white is what
1:24
you really want yes I know this say
1:27
white
1:28
cheddar it's supposed to say white
1:30
pepper but that's okay that's what that
1:32
is one
1:35
egg we're using Pacific Sea
1:40
salt because and it's fine salt if you
1:43
want to use table salt that's okay but
1:45
CA salt is better but you really want a
1:47
fine grain because this is not being
1:50
cooked so the salt doesn't really have a
1:52
chance
1:54
to um to liquefy so it needs to be as
1:57
small as possible and of course we have
2:00
here a
2:01
lemon and a new tool which I'm going to
2:04
be trying today so let's get
2:09
started first thing the egg now
2:13
I see now my stick blender has a little
2:19
bowl for it that
2:21
has numbering on it and that's really
2:24
nice and convenient I'm going to close
2:26
this
2:28
up set it aside until I need
2:31
it so here we go
2:35
one and you go next thing we're going to
2:38
do is we're going to add
2:42
a tablespoon of lemon juice so we're
2:46
going to try the new
2:48
toy and we'll
2:50
put lemon half in there make sure that
2:54
it's like that okay press down
3:00
see how nicely the lemon juice collects
3:02
in the bottom there okay so we only need
3:04
a tablespoon for our
3:06
mayonnaise here we
3:09
go
3:13
tablespoon a teaspoon of dried
3:18
mustard this is important it needs to be
3:20
dried mustard uh Coleman's is the best
3:24
but it needs to be dried mustard not
3:26
prepared mustard
3:32
we need a teaspoon for
3:34
that what mustard does mustard does two
3:38
things in this
3:39
instance it adds
3:42
flavor and mustard mixed with it acid
3:46
and oil will also help the oil and acid
3:51
emulsify and that's what we are doing
3:54
here so we did that and then we're going
3:56
to add
3:59
a teaspoon of distilled
4:17
vinegar qu of a
4:21
teaspoon of salt
4:45
an e/ of a teaspoon or a
4:49
dash of white pepper
5:02
and
5:05
finally cup of canola
5:11
oil or
5:13
whatever unflavored oil you have that
5:16
you like
5:31
okay if you wanted to add other
5:33
flavorings to this
5:35
like Chipotle or garlic or herbs or
5:40
something else now would be the time to
5:42
do this but we're just making regular
5:44
plain
5:46
mayonnaise so here we
5:53
go this all the way down to the bottom
5:56
and turn it
5:58
on and watch what
6:06
happens you really do want something
6:09
that's um um deep like this because it
6:13
helps everything most
6:26
[Applause]
6:30
you see how nice that
6:40
looks you see how it
6:45
thickened and
6:51
now this is just I'm just going to leave
6:54
this out well I'm not going to leave it
6:56
out I'm going to put it in the
6:57
refrigerator
7:06
and I'm going to put this in the
7:09
refrigerator and it will thicken up even
7:18
more and when that happens we'll come
7:22
back and I'll show you what it looks
7:24
like let's taste it
7:27
first m
7:30
that is really delicious that tastes
7:32
just like Best Foods
7:35
yum okay the mayonnaise is done we've
7:38
let it sit for a few hours and look it's
7:41
so nice and thick it doesn't even
7:47
move look at that nice and thick just
7:51
the way we want
7:54
it oh it's just absolutely delicious you
7:57
can't get any better than fresh
8:00
mayonnaise and I hope we'll see you next
8:02
time on the good plate
